Renames the phd-server host (and its compose file) to phd-beelink across the Makefile, compose, .env(.example), README and pipeline docs.

Adds two minimal Pangolin site hosts:

  • phd-tower runs the Pangolin site agent (fosrl/pangolin-cli) with TOWER_SITE_ID/TOWER_SITE_SECRET
  • phd-razer runs fosrl/newt with RAZER_SITE_ID/RAZER_SITE_SECRET

Site-agent credentials are now named per host (BEELINK_SITE_, TOWER_SITE_, RAZER_SITE_*).

Also drops the local Ollama container from phd-beelink: Open WebUI stays, backed by Ollama Cloud, with its connection managed purely from the app's admin UI (ENABLE_PERSISTENT_CONFIG left at its true default so admin-UI config persists).
