Simplify the build process so that each platform builds natively:

  • Linux builds Linux installers (AppImage, .deb, .rpm)
  • Windows builds Windows installers (.msi, .exe)
  • macOS builds macOS installers (.dmg, .app)

Changes:

  • Makefile: Add OS detection, make build now builds for current platform
  • setup.sh: Remove LLVM/lld/clang deps and cargo-xwin setup
  • Docs: Rewrite cross-compilation guide as platform builds guide

This removes the cargo-xwin cross-compilation approach which required complex toolchain setup and couldn't produce Windows installers anyway.
